COLUMN BY DIETITIAN MEREL COENDERS
Pumpkin soup
What you’ll need:
Hand blender
Ingredients:
1 leek
1 (bottle) pumpkin
2 tablespoons of olive oil
1 tablespoon of curry powder
1 tin of lima beans (400 g)
1 litre of vegetable stock
200 ml coconut milk
Cut the leeks into rings. Wash them thoroughly to remove any soil.
Cut the pumpkin in half and remove the seeds and stringy flesh with a spoon. Leave the skin on. Cut the pumpkin into large chunks.
Heat the olive oil in a soup pan and fry the curry powder for 30 seconds over a medium heat. Then add the leek and diced pumpkin and fry for 5 minutes. Stir regularly.
Drain the lima beans and rinse them under running water. Fry them for a further minute with the leek and pumpkin.
Add the vegetable stock. Bring to the boil and simmer gently for 15 minutes. Check whether the pumpkin is cooked by pricking it with a fork.
Blend the soup with a hand blender.
Add the coconut milk and give it another good stir.
